SHEBOYGAN — Work has started on a new Cousins Subs restaurant on Sheboygan’s south side in the Conoco neighborhood.
Demolition of the former Gilles Frozen Custard drive-in restaurant on South Business Drive was completed this week to make way for a new Cousins Subs location. Gilles opened in 2010 but would close just three years later at the end of the 2013 season. The owners cited cold weather and poor sales as reasons for the closure. Afterwards, the property sat vacant until Dan Wilson opened Paradise Auto. Wilson died in a motor vehicle crash at the age of 56 in September 2018 at South 14th Street and Pennsylvania Avenue, and again the property was left vacant.
The new 2,400 square foot Cousins Subs restaurant, located at 2720 South Business Drive, will include a full service drive‐thru and seasonal patio dining. This will be a corporate operated location rather than a franchise. The overall investment is expected to be just over $1.5 million.
A second location will open in the former Kentucky Fried Chicken restaurant near North Avenue and Calumet Drive. The proposed redevelopment will include a new 1,972-square-foot shop with a full service drive‐thru and seasonal patio dining. The remodel is expected to cost about $350,000. The two new locations are aiming for a spring opening according to Kristen Tracy, Public Relations Manager at Cousins Subs.
Cousins Subs previously had a restaurant located at South Business Drive and Oakland Avenue. Open since 2001, it closed earlier this year due to its lease ending and needing a full reinvestment and remodel. It also could not accommodate a full service drive‐thru and it did not have adequate parking for customers.
The Menomonee Falls-based sub sandwich chain expanded to Sheboygan in 1989 on South Taylor Drive in the Taylor Heights Shopping Center. That location remains open for now while the two new restaurants are under construction.
